Ingredients
3 cans of Campbell’s beef broth (do not substitute)
3 cans of water
2-3 large onions coarsely chopped
8 ounces sherry cooking wine (I like Holland House)
1 bay leaf
1 teaspoon sage
1 tablespoon (or more) extra virgin olive oil
1 tablespoon butter (unsalted preferred)
1 tablespoon sugar
2 tablespoons flour
1 package croutons
Mozzarella cheese shredded
Parmesan/Romano cheese shredded or Parmesan in jar
Tried this recipe several years ago and it’s been one of our favorites. Very tasty, and easy to make. It’s from Cooks County and like most of their recipes, worth adding to your repertoire.
If you read my post, “Site rendering problem finally solved?”, then you know I’ve been struggling with problems regarding this blog. It seems that page speed/rendering was my number one pain-in-the… the culprit that led many to see the dreaded CIRCLE OF DEATH! After many tweaks of cache settings, deletion of plug-ins, etc., I was still pulling my hair out and in technical limbo after more than a month. I even moved my files to another US server (same hosting company). Believe me, I tried every trick in my techie book, but to no avail. That is, until last night.
Marion’s Mini Meat Loaves
1 egg slightly beaten
1 cup Prego spaghetti sauce
½ cup fine, dry breadcrumbs
¼ cup fresh basil leaves, coarsely chopped
¼ teaspoon garlic powder
¼ teaspoon salt
Pepper to taste
1 lb lean ground beef
1 cup Mozzarella cheese, shredded or (half parmesan and half mozzarella)
